Mini Chocolate Muffins & Strawberry Sticks






These mini muffins are perfect for breakfast on the go. When you are in a hurry, these muffins are perfect to eat whilst on the way to school :) Secretsquirrelfood mixed bananas with strawberries, almond and cocoa powder, to provide us with really tasty sticks!

All you need:

2 ripe medium bananas
2 eggs
1/2 cup al alali Pancake Syrup
1 1/2 cup almond meal
1/4 cup ground flaxseed
1/2 cup al alali Cocoa Powder
1 tsp al alali Vanilla Powder
1 tsp al alali Baking Powder

Decoration:
Fresh strawberries
Bamboo skewer sticks

Directions:

Preheat oven at 175 ˚C (350 ˚F)

In a large mixing bowl, add all ingredients and carefully mix well until all combined

Scoop 1 tbsp of muffin mixture into a mini muffin tray. This will make approximately 30 mini muffins

Bake in oven for approximately 10 minutes. Insert a toothpick in the middle and make sure it comes out clean, to check if it is cooked

Carefully remove from muffin tray and let cool completely

Using a bamboo skewer, thread the mini muffins and strawberries. Alternating between each one

Serve and enjoy!
